Festival of Iris and Arancini and traditional market of the dead, 28 October / 1 November 2017. Tremestieri Etneo – in the province of Catania – will be the center of a local festival, which will give space not only to the typical culinary specialties, but aims to include and welcome families and all the production and craft industries of the small town at the foot of Etna.
The traditions of the country, declined in all the specialties and typical fields: not only food area, but also the classic market of the dead with excellent craftsmanship, the exhibition of Sicilian carts and entertainment for children and for the whole family. The heart of the festival will be the park named after Father Salvatore Consoli, on Via Marletta, next to the Mother Church of Tremestieri Etneo.
The iris is one of the most famous typical desserts of Sicilian cuisine is a rich and very tasty snack, but above all an expression of the oldest home cooking. Of this dessert there are two versions, identical in the process, different only in cooking: the one cooked in the oven and the fried one, tastier obviously. In the latter the union between a very soft fried pasta and a little granular, the cream (of ricotta and chocolate, white or chocolate) make this delicacy one of the milestones, of the Sicilian delicacies. The ancient recipe used sandwiches, shaped like rosettes, filled with ricotta cream, breaded and fried.
